Ingredients:-
2 cups long grain rice
1 tbsp. Garlic
2 tbsp. Olive oil
2 to 3 tsp. Soy Sauce
¾ to 1 tbsp. Vinegar
2-3 Star Anise
1 strand Mace
1 slit Green Chilli
8 to 10 leaves of Celery
Salt as needed
A pinch of sugar (optional)
Chopped Veggies for fried rice recipe
¼ cup Carrots
¼ cup Bell Peppers
¼ cup Beans
3 tbsp. Cabbage
3 tbsp. Spring onions
Method:-
1. Wash rice till the water runs clear. Soak it for at least 10 minutes and cook in a lot of water with little oil, star anise and mace till al dente. Drain off the rice to a colander and let it cool down to room temperature.
2. Heat a wok with oil on the highest flame, add chopped garlic and sauté till they get fried slightly. If you wish to, use mace and star anise.
3. Add all the chopped vegetables and fry for a minute or two. Add sugar as per taste. If you like very crunchy bell peppers add them in the next step.
4. To make Indian fried rice recipe just add vinegar to the wok. To make Chinese style, add soy sauce, vinegar and salt.
5. Add rice and pepper powder. Mix everything well and fry for 2 mins on high flame.
6. Garnish with fresh chopped spring onions and serve piping hot.
TIPS:-
Rice must be fried on the highest flame or heat. to lend a smoky flavour to the rice.
